Cassava cake recipe with creamy coconut
Of all the typical recipes of the Festa Junina, this manioc cake with coconut is one of the easiest to make - and tastier too!
This cake is super creamy and the preparation does not require the use of a mixer or blender. Very simple to make, the secret of this recipe is to keep an eye on the oven so as not to let the cake bake too much and thus ensure that it is very wet.

Ingredients for making Cassava cake with creamy coconut:
400 grams of grated raw cassava
1 glass of coconut milk
270 grams of sugar
2 eggs
2 tablespoons butter
100 grams of shredded coconut (1¼ cups)
1 pinch of salt
flour and butter to grease the mold or release agent
How to Make Cassava Cake with Creamy Coconut:
Separate the ingredients of your creamy cassava cake with coconut. Grate the cassava and leave the butter at room temperature.
Tip: preheat the oven to 180ºC (medium-high oven) at this time, so that it is already at the right temperature when placing the cake to bake.
In a large bowl place the eggs, sugar and butter.
Beat for 1-2 minutes, until smooth and very light, as in the photo below.
Tip: if you prefer, you can beat these ingredients in the mixer. We do not recommend beating this cassava cake recipe in a blender so as not to lose the texture of cassava and coconut!
Then add the rest of the ingredients (cassava, coconut milk, grated coconut and salt) and mix well again.
Pour the dough of your moist cassava cake in a form greased with butter and flour (or mold release) and place in a preheated oven at 180ºC, baking for approximately 30 minutes.
Tip: don't let it bake too much to make sure your cake is creamy on the inside - keep an eye on the oven!
